It has been a fantastic first week for preparing to spend winter here at Flying Fish Point, Caravan Park.  Who would have thought that I would have bought my husband Reg  a fishing line on Tuesday not knowing if he would use it and he has already caught six fish :-).  Nothing like fresh cooked, whiting and salad, for a healthy, breakfast, lunch or tea.  

Healthy meals are going to be a easy, we will be eating white fish regularly at this rate as Reg is loving the experience of fishing..
Sunday tomorrow will also be the day, I have committed to getting out of bed before dawn and to be outside, exercising at dawn. :-)  Not too hard as I will be in tropical Queensland watching, the sun rise over a beautiful ocean and my man fishes for our breakfast. What joy.

Meanwhile back in Victoria, winter is setting in and one of our daughters, has the job of organizing our car and caravan registration, renewals, fire insurance quotes and all those bills we could not set up as auto deduct from our accounts. Thanks Leanne J, you are a gem.

Tarra Valley, Campfire Chicken Sang Chow Bow.

Shop up at Yarram before driving up to Fernhome at Tarra Valley to set up the caravan at one of the powered caravan sites on the Tarra Riverside.

I put the hot plate, out on the table, beside the campfire.  Large sacks of firewood can be bought here for $15. a bag, though we found our own, easily enough, by the roadside.

This meal was delicious and healthy. I am eating meals at around 300 to 350 calories a serve and enjoying this wonderful place for walks and stair climbs to waterfalls, this healthy eating and the outdoor exercise at Tarra Valley has been my idea of a  click here to lose weight fast, method J.

I have lost weight easily this week as the fern gully walks, and jogs, have been a heavenly way to do my cardio exercise.

·        OK, back to making the Sang Choy Bow. J 

·        I lightly sprayed my non-stick saucepan with olive oil prey.

·        Stir-fried, 220 gram of minced lean chicken and one chopped onion, for a couple of minutes.

I chopped one zucchini, one carrot, one red pepper, 2 celery stalks and the tops, one  baby bock choy, one clove of garlic , 3 teaspoons oyster sauce, 2 teaspoons salt reduced soy sauce, add to the chicken and onion  and stir fry for a further 4 minutes.

Add 2 handfuls, of fresh bean sprouts, stir through until heated.

Chop the white and some of the green stem of two spring onions

Divide a crisp iceberg lettuce into cups on dinner plates and scoop the chicken and vegetable mixture into the lettuce cups, sprinkle the diced spring onions over the mixture and roll the cup of lettuce up into enclosed parcels.

Eat with your hands, around the campfire.

If you are not counting calories, enjoy with a chilled white wine.

Reg is happily making preparations for our next caravan tour.
Reg had his specialist appointment yesterday at the local hospital outpatient’s department. Being a senior, aged pensioner, he never saw the specialist, just one of the student doctors, who did give him a good examination, and really just listened, no opinion given to us. I felt like Reg was just a training exercise to him and the appointment we had waited for had been a waste of our time.

So back to the home remedies, the age old remedies for illness of good nutrition, chicken soup, my mum’s recipe for beef tea, nutritional supplements such as Glucosamine and anti inflammatory fish oils. Glucosamine is an amino sugar derived from the chitin of shellfish that is used by the body to support healthy joint structures. Both Reg and I take this along with the fish oil, omega 3 rich, capsules, when we experience joint pain. 

The most important thing we do to keep flexible is to walk and strive to be active. We both believe in the saying, if you don’t use it, you lose it. It is hard making the effort to begin walking again, after an illness, when you are a senior, it takes even more effort to overcome the stiffness and pain, but the reward for making the effort, a little more movement each day, is now showing for Reg J

Reg has done a great job working to reclaim his flexibility and fitnessJ. Today he is happily pottering around outside with his caravan packing for our next tripJ.

We are enjoying the trip preparation phase and I love seeing Reg getting a little fitter, every week. When he became ill back in early springtime, with whooping cough, I promised him he would be well again by Christmas. These are the other, natural supplements we both believe in, positive thinking J and making plans for the future are the things that keep today’s gray nomad, living and loving life.

Ingredients, choose from your own favorites.

DRIED FRUIT (1 cup chopped)


CEREAL (1 cup)

NUTS & SEEDS (1/2 cup)

OPTIONAL (1/2 cup) dried cooked soybeans or Popcorn

Directions

Mix well and store in serving size: 1/4 cup press seal bags.
